Ingredients:

PAM® Original No-Stick Cooking Spray
1/2 cup Finely chopped red or green bell pepper 125 mL
1/3 cup Potato hashbrowns (homemade or frozen) 80 mL
2 Strips bacon or links of sausage, chopped 2
1 tsp Chopped oregano leaves, fresh or dry 5 mL
1 cup Egg Beaters® Original or Southwestern 250 mL


Directions:

  1. Spray small non-stick skillet with cooking spray; heat over medium heat. Add peppers, potato, bacon and oregano. Cook 4 minutes, or until vegetables are tender-crisp, stirring frequently. Remove from skillet; cover to keep warm.
  2. Pour Egg Beaters into skillet; cook over medium heat 7 minutes, or until almost set in center, tilting skillet as necessary to allow uncooked portion to flow underneath.
  3. Spoon vegetable mixture onto half of omelet; fold omelet in half. Slide onto serving plate.

Helpful Tip: Cut the cholesterol and fat further by using turkey bacon instead of traditional bacon or sausage.
